Grown as long ago as 5000BC, this delicious grain, which is high in protein and B Vitamins, has been embraced by many people with gluten intolerance. Whereas other modern grains have been modified over time to produce more gluten (for the bakery industry) and greater yields, Spelt has remained unchanged. Spelt, known as Farro (Italy), Dinkle (Germany) and Farrum (Roman times), is protected from insect attack and outside elements due to its hard husk. St Hildegard wrote, "The spelt is the best of grains. It is rich and nourishing and milder than other grain. It produces a strong body and healthy blood to those who eat it and it makes the spirit of man light and cheerful."
The grain of this ancient plant is valued by many people with allergies to other grains. The tender young organic shoots are harvested before the grain forms, dried in a vacuum and then powdered. The powder looks much like green barley powder and is very mild tasting.
